Banana ice cream sundae

Very quick little recipe/idea for a dessert, or afternoon special treat.

This ice cream sundae was my little treat on a Sunday afternoon, after having a marvelous time at a friend's birthday party the evening before. I needed a little pick-me-up (as you do) and as the weather was hot and sticky, this cool treat hit the spot.



I used the ingredients I had in the fridge/freezer/fruit bowl. there are many combinations that would work, such as:
- chocolate icecream, slightly warmed peanut butter,  sliced banana and a sprinkle of nuts (think banoffee pie in a glass)
- vanilla icecream, tinned apricots or peaches, sprinkle of coconut flakes
- raspberry sorbet, sliced mango, fresh/frozen raspberries and a sprinkle of coconut chips
- vanilla icecream, fresh blueberries and a drizzle of honey
- vanilla icecream, fresh pineapple chunks and some gingernut biscuits crumbled over.

The glass above contains strawberry and vanilla icecream, sliced banana and some sour cherry compote that my husband's aunt made. I enjoyed it very much and so did my son, who joined me in having a treat.

This would be a very easy dessert to whip up after a casual dinner. You could even lay all the ingredients out on the kitchen bench (or bring them to the table) and the guests can make their own. Now that is what I call an easy dessert.
